Ingredients:

8-10 Lasagna Sheets (lasagna noodles)

Two table spoons Extra Virgin Olive Oil

One cup Onion (finely chopped)

3-4 garlic cloves (minced)

¼ crushed red pepper flakes (preferably fresh)

One cup mushrooms
-
Eggplant (if you like)
-
One can crushed or finely diced tomatoes
-
Fresh Basil leaves (to taste)
-
Cheese sauce (if available)
-
Ricotta or Cottage Cheese 15 Oz
-
Shredded Mozzarella Cheese 8 Oz
-
Salt to taste
-
2 Eggs
-
Freshly Ground black pepper to taste

Sweet Corn to taste

Note: Any other vegetable that you like can be added or omitted.
Method:
Start off with the cooking bit by boiling the lasagna sheets. Add little salt and olive oil to a pot filled to top with water. Add the Lasagna sheets in it and let it boil. Make sure the sheets are boiled till al Dante. One the sheets are boiled drain them out and run cold water through them. Lay them on flat foil afterwards.
Heat oil in a pain and add the chopped onions. Fry them till 4 minutes or when you see a light color change in them. Add garlic, red pepper flakes, tomatoes and salt. Stir occasionally and keep check on it.
Add other vegetables and let it simmer till it is curry like or up to the right consistency. Add basil, some more salt and finally black pepper as seasoning. Give one nice stir and set aside.
For cheese filling mix eggs, ricotta or cottage cheese with salt. Stir until ingredients are well combined. Do NOT put on stove as eggs will begin to scramble.
Start assembling your lasagna layer by layer. Put vegetable mixture’s one layer (not too much) and cover with four lasagna sheets length wise. Make sure the vegetable mixture is fully covered and if not, add a little bit more of lasagna sheets accordingly.
Spread half of the cheese filling on the first layer of the lasagna sheets. Sprinkle mozzarella cheese and parmesan cheese if you like. Add the vegetable mixture on top of it again by layering it evenly. Add some more cheese filling. Put final four lasagna sheets and cover with the remaining cheese filling and mozzarella cheese. Garnish with little parmesan and red chili flakes.
Bake for 20 minutes with upper grill switched on at 200 degrees. Keep an eye on it and as soon as the cheese melts, check lasagna and take it out. Set aside for 15 minutes before cutting it out and finally eating the scrumptious and easy to make vegetarian lasagna.
